Vegan Gluten Free Tapioca Pudding With Coconut Milk

A delicious vegan creamy pudding made with tapioca and coconut milk.

Ingredients
  

  • 1/2 cup tapioca pearls
  • 3 1/4 cups coconut milk
  • pinch of salt
  • pinch of anise
  • 1/2 cup of sugar
  • 1 1/2 teaspoons natural vanilla extract
  • 1 teaspoon of cinnamon for garnishing

Instructions
 

  • Add the coconut milk and salt and tapioca pearls into a medium-size bowl and cook on medium-high heat stirring occasionally until the mixture starts to thicken.
  • Lower the heat to low and add in the vanilla and stir.
  • Add in the sugar and anise and stir until well combined.
  • Simmer for about 5 minutes stirring occasionally to prevent the tapioca from sticking to the bottom.
  • Remove from heat and place into a serving plate.
  • Sprinkle with cinnamon and Enjoy.
