Preheat the oven to 350°F (180°C) and prepare your muffin pan by place the muffin cups in the pans and put aside.
In a blender or food processor, Add the oats, ground flaxseed, baking powder, baking soda and salt and blend on high until fine four consistency.
Add the rest of the remaining ingredients except for the chocolate chips.
Blend or process with food proscessor ingredients on highspeed until the batter becomes smooth and creamy, about 40 seconds.
Occasionally scrape down the sides of your blender. Add in the chocolate chip and mix by hand until well incorporated.
Fill each of the muffin cup about 3/4 high and garnish the tops with some chocolate chip
Place baking tray in oven and bake for about 18 minutes. Stick a toothpick into the center, if it come back clean the muffins are ready. Remove the muffins and place on a rack to cool.
Once thay are cooled, Enjoy or place them in an airtight container. They will keep well at room temperature for up to 7 days or freeze them up to 3 months.
