Quick Dutch Baby Pancake Recipe (German Popover)

A twist on a classic German Popover. Here is a delectable quick Dutch baby pancake recipe ( German Popover) using a blender that makes an exquisite breakfast. This Dutch baby pancake is super easy to make and only requires minimum tools, blender, sift and skillet.

Ingredients
  

  • 75 grams butter cut into cubes 5 tablespoons
  • 245 grams almond milk 1 cup or milk
  • Pinch of salt
  • Pinch of cinnamon
  • Pinch of nutmeg
  • 150 grams eggs 3 large eggs beaten
  • 15 grams sugar 3 teaspoons
  • 100 grams all purpose flour 3/4 cup
  • 2 grams vanilla extract 1/2 teaspoon
  • Pinch of ground nutmeg
  • 3 tablespoons confectioners’ sugar for dusting

Instructions
 

  • Preheat oven to 450°F/230°C and set rack to middle position.
  • Spread the butter throughout a 10 inch cast iron skillet and place into the oven.
  • In the Meantime, add the eggs and vanilla into a blender and blend until you see it foam.
  • Add in the almond milk, flour, spices, salt and sugar and blend until well combined.
  • Carefully remove the skillet from the oven with proper hand protection and pour in the batter.
  • Place pan back into the oven and bake for approximately 18 to 20 minutes, or until puffed and lightly golden brown.
  • Remove from oven and using and spatula to remove the Dutch baby and place it onto a plate or cutting board.
  • Cut into wedges and dust with icing sugar.
  • Serve with strawberry, raspberry or blueberry sauce or simply drizzle some honey or maple syrup on top.
