450gramsof dark chocolate60% cacao, chopped or in chip form
140gramscreamy natural peanut butter
30gramsunsalted buttersoftened
50gramsconfectioner's sugarsifted
5gramsvanilla extract
1/4tspsea salt1.2 grams
Instructions
Line a standard 12-cup muffin baking pan with paper cupcake liners.
In a double boiler or using the microwave melt half the dark chocolate until smooth, then mix in 1/8 teaspoon of the sea salt and stir to combine.
Spoon the melted chocolate into the muffin cups and use the back of a spoon to evenly coat the bottom and sides. Place into the freezer for 15 minutes or until the chocolate is firm.
In a separate bowl beat together the peanut butter, butter, confectioner's sugar, vanilla extract, and half of the sea salt until it turns light and fluffy.
Drop spoonfuls of the peanut butter mixture into the muffin cups and use the back of a spoon to spread evenly and create a flat surface. Freeze again for 15 minutes or until firm.
Melt the remaining dark chocolate in the double boiler or microwave and stir in the remaining sea salt.
