Traditional French Ratatouille Recipe

Ingredients
  

  • 2 medium eggplants diced into 1-inch cubes
  • 2 bell peppers red and yellow, seeded and diced into 1-inch cubes
  • 1 large onion sliced or chopped
  • 2 medium zucchinis diced into 1-inch cubes
  • 4 cloves of garlic minced
  • 4 vine-ripened tomatoes diced
  • 1/4 cup of extra-virgin olive oil
  • 2 tablespoons of fresh basil chopped
  • 2 tablespoons of fresh thyme leaves
  • Salt and freshly ground black pepper to taste

Instructions
 

  • Start by preparing all of your vegetables, thoroughly washing them, then dice them into 1-inch cubes. If you prefer you can peel your tomatoes but for this recipe, I added mine unpeeled.
  • In a large skillet, heat the extra-virgin olive oil over medium heat.
  • Once the oil is hot, add the eggplant, bell peppers, onions, and zucchini. Cook for 10 minutes or until the vegetables are tender, stirring occasionally.
  • Next, add the minced garlic to the skillet and continue to cook for an additional 2 minutes.
  • Stir in the diced tomatoes, chopped basil, and thyme leaves. Season with salt and freshly ground black pepper to taste.
  • Reduce the heat to low, cover the skillet, and simmer for 20 minutes, allowing the flavors to blend together.
  • Serve the ratatouille as a side dish, or over pasta, rice, or bread. You can also enjoy it cold as a salad.
  • Enjoy your ratatouille with a sprinkle of fresh herbs and a drizzle of extra-virgin olive oil.
