Ingredients
  

  • 2 cups all-purpose flour 250 grams
  • 5 tablespoons unsalted butter 70 grams, softened
  • 3 tablespoons oil 45 grams,
  • 1 cup sugar 200 grams
  • 2 teaspoons baking powder 10 grams
  • 1/2 teaspoon salt 3 grams
  • 1/2 cup milk 120 grams
  • 3 tablespoons oil 45 grams
  • 1 teaspoon vanilla extract 5 grams
  • 2 large eggs 100 grams
  • 2 cups frozen blueberries 200 grams
  • 60 grams coarse sugar for topping

Instructions
 

  • Preheat the oven to 350°F (175°C) and line a 12-muffin cup pan with muffin paper liners.
  • In a medium-sized bowl, combine all-purpose flour, salt, and baking powder and whisk together.
  • In a separate bowl of a stand mixer with the paddle attachment or hand mixer, beat together the butter, oil, and sugar for 2-3 minutes or until light and fluffy.
  • Beat in eggs, one at a time, and scrape the sides and bottom of the bowl as needed after each addition. Then add the vanilla extract and milk and beat until combined, about 30 seconds.
  • Gradually add the flour mixture to the wet mixture and mix on medium speed until just combined.
  • Fold the blueberries into the batter using a spatula until well dispersed into the batter.
  • Using a muffin scoop, divide the batter evenly among the muffin cups, filling each muffin cup about 3/4 high. You can also use a tablespoon or measuring cup to fill the cups.
  • Bake the blueberry muffins for approximately 25-30 minutes or until golden brown and a toothpick inserted into the center of a muffin comes out clean.
  • Once the muffins are baked remove them from the oven and carefully transfer them onto a cooling rack for 20 minutes before serving.
