Easy Strawberry Rhubarb Cobbler Recipe

I love the sweet and tart combination of strawberries and rhubarb, cobblers are so delicious and easy to make. Strawberry and rhubarb recipes are one of our favorites. My daughter and I recently prepared a batch of this baked old-fashioned strawberry rhubarb cobbler this past weekend for her friend’s birthday party and everyone raved about it.

Ingredients
  

  • 1 cup all-purpose flour
  • 1 stick of butter cold cut into thin slices about 8 tablespoons
  • 1/4 teaspoon salt
  • 1/2 teaspoon cinnamon optional
  • 2 tablespoons lemon juice
  • 1 1/4 cup of sugar
  • 5 cups strawberries fresh or frozen cut in half
  • 3 cups rhubarb fresh or frozen cut into small pieces
  • 1 large egg

Instructions
 

  • Preheat the oven to 190°C (375°F) and set the oven rack to the middle position.
  • Cut the strawberries in halves and slice the rhubarb into 1/2 inch chunks and place into a bowl. Add the lemon juice and mix it together.
  • Transfer the mixed fruit into a 9X9 baking dish.
  • Add the flour, cinnamon (optional), salt, sugar, and eggs and mix using your hands or with a stand mixer with the paddle attachment until a crumble consistency.
  • Evenly cover the strawberry and rhubarb mixture with the crumble.
  • Slice the cold butter into thin pieces and place over the crumble covering the whole top.
  • Place the cobbler into the oven and bake for 40-45 minutes or until golden brown.
  • Remove from the oven and serve.
