CINNAMON SUGAR MIX FOR DONUTS
Combine the sugar and cinnamon into a bowl and mix until well combined.
Keep stored in an airtight container and use as needed.
DONUT BATTER
Add the flour, sugar, salt and baking powder into a medium size bowl and whisk together.
Pour in the milk, eggs and vanilla extract and mixing using a whisk until batter is smooth and lump free and set aside.
DONUT FILLING
Wash the apple and cut out tha bottom and top of the apples.
Slice the apples into 1/2 inch thickness and cut out the center using a small round cutter, you can use small cookie cutter or piping bag tip about 3/4 inch.
Use the left over cut pieces to make small bite size donuts.
Place the flour into a plate. Coat the apples with the flour on both side and put them into a skewer, one apple slice for each skewer.
DEEP FRY
Place oil in a deep frying pan and heat to 160 ° C ( 320°F).
Dip and coat the floured apple ring into the batter, then place into hot oil turning them on both sides until golden brown about 2-3 minutes.
Repeat until all your floured apple rings are coated and fried.
DECORATATION
Temper the couverture using the chocolate seeding method.
Fill a pot with water and place a stainsteel bowl over it, the stainless bowl need to sit ontop of the pot without coming into contact with the water inside.
Melt only two-thirds of the dar or white chocolate over a warm, non-boiling water bath, once chocolate has melted remove it from the pot and add the third stirring until it has melted.
If your using white chocolate, add a couple of drops of your choice of food coloring and stir until desired color is achieved.
Dip the of the donuts in the chocolate and sprinkle them with chocolate pearls, sprinkles or your choice of toppings.
Allow the chocolate to set.
Anonther option is to roll each donut into cinnamon sugar mix.
