Easy Tiramisu Without Eggs or Mascarpone

This easy Italian classic tiramisu cake recipe without eggs and mascarpone is made using smooth ricotta cheese, heavy whipping cream, vanilla, and amaretto liquor.

- 2 cups whipping cream 35% 240 grams
- 1 teaspoon vanilla extract 5 grams
- 5 teaspoon Amaretto liquor 25 grams or any coffee liquor
- 1 small package lady fingers biscuits 200 grams or 16-20 pieces
- 1/2 cup granulated sugar 100 grams
- 1 container smooth ricotta cheese whipped 9oz or 250 grams
- 1 1/2 cup espresso 360 grams or strong black coffee
- 1 small pack lady fingers 200 grams or 16-20 pieces
- 4 tablespoons cocoa powder 40 grams
Add the whipping cream, vanilla and sugar into a mixing bowl with the whisk attachment.
Whip on medium speed until firm stiff peaks are achieved. You can also use a hand mixer.
In a separate bowl whip the ricotta cheese for 2 minutes on high speed or until smooth, light and airy.
. Fold in the the whipped ricotta cheese with the cream mixture using spatula and set aside.
In a medium size bowl, add the espresso or coffee and the amaretto liquor and mix to combine.
Submerge each lady finger biscuit into the espresso mixture and place them into the bottom of a 7X11 glass baking dish. If you have an 8X8 dish, that will work to.
Deposit half of the cream cheese whipping cream and spread evenly throughout the top of the lady fingers.
Repeat with another layer of soaked lady fingers and cream.
Evenly sift and coat the surface of the tirmaisu cake with cocoa powder.
Place into the refrigerator for a least 4 hours.
