Our homemade deep-dish apple pie recipe with brown sugar and vanilla is filled with layers of cinnamon-spiced apples tucked under a beautifully laced flaky lattice topping.

This traditional deep-dish flaky apple pie from scratch is easy to make as long as you follow “Our Good To Know Tips”. Before you know it, you’ll be serving your proud slice of homemade deep-dish apple pie with a scoop of vanilla ice cream to your family and guests.

Apple Pie With Fresh Apples

I believe to make the best apple pie, the filling should be made with only fresh crisp apples…seriously! When I say fresh, I mean freshly picked or store-bought apples that are firm and crisp. Apple pie with fresh apples simply just taste better.

Apple Pie Without Eggs

Making apple pie and apple pie filling should be easy with minimal ingredients. Our homemade deep-dish apple pie filling is made without eggs, without lemon juice, without nutmeg or cloves, and with brown sugar, vanilla extract, cinnamon, allspice, and flour.

Apple Pie Filling Without Cornstarch

To prevent a soggy apple filling, we make our apple pie filling without cornstarch and with regular flour. If you don’t have flour, you can easy replace it with cornstarch, rice flour, or potato flour.

Apple Pie Without Lemon Juice

Although our apple pie filling is made without lemon juice, we are not against adding lemon juice into apple pie filling, the benefit of using lemon juice is to prevent the apple slices from browning. Avoid the lemon juice simply by slicing the apples and coating them just before adding them to the pie dough.

Good To Know Tips

  • First, be careful not to overmix your pie dough. I prefer to mix my pie dough using a planetary mixing machine with the paddle attachment but you can also mix by hand or even use a food processor.
  • Second – keep your water ice-cold, this will keep the butter chilled during mixing and avoiding any meltdown. You can use ice to chill the water or chill the water in the freezer for about 30 minutes before using it. Coldwater will keep your pie dough at a controlled temperature at around (16C).
  • Third – for the ultimate flaky pie crust, use only cold butter when mixing or cutting into the flour mixture. I prefer to pre-cut the butter into small cubes then freeze it for 20 minutes prior to adding it to the flour. You will see speckles of fat dispersed through the dough once it’s mixed, this is a good thing.
  • Fourth, I can’t emphasize enough how important it is to use fresh apples. Use only fresh apples, and slice the apples the same thickness, about 1/4 thick just before adding them into the pie dough.
  • Fifth – always roll out your pie dough when it’s cold. Return the dough back to the refrigerator if you feel it warming up. Once chilled again, continue where you left off.
